Apple Basil Salmon
Got this recipe from my friend Brian McConchie

-approx. 8 oz. filet of salmon
-fresh basil
-dijon mustard
-1 small apple (I prefer fuji apple or something similar)
-tin foil to seal around salmon

Preheat oven to 325 degrees. Chop the apple in approx. 3/4 inch  pieces and put half down on the tin foil. Coat the top and sides of the salmon with a thin layer of dijon mustard. Tear up or chop enough basil to coat top of the salmon. Place on top of the salmon and place the salmon on top of the apples, top side down. Place the remaining apples on top of the upside down salmon and seal the tin foil. Bake about 30 minutes.
